A spike in healthy eating?

Veg-hogs are a healthy snack idea perfect for kid’s birthday parties (when healthy sometimes goes missing). Delicious zucchini fries that you tuck into a paper cone (that looks like a hedgehog!).

Don’t worry, we’ve made a hedgehog cone template for you (just click the download button below). And the recipe is almost as easy. Follow the steps below – it’s easy to make enough for as many kids as you like.

You’ll need:

• Veg-hogs printouts
• Parchment paper
• Safety scissors
• Tape

Let's make some Veg-hog cones!

Tear a piece of parchment paper the same size as the Veg-hog printout. Put the printout on top and cut them out.

Tape both sheets together on the sides.

Fold the bottom (the bit where the nose is) along the dotted line and roll until you have a cone shape.

Adjust the cone to make the top wider (more fries!) and tape it shut.

For 6 cones,
you’ll need:

• 3 medium zucchinis (1 lb.)

• 2/3 cup of all-purpose flour

• ⅛ tsp of salt (+ a pinch before serving)

• 1 cup of bread crumbs

• 1 cup of grated Parmesan cheese

• 1 tbsp of Italian seasoning blend

• 1 tbsp of water

• 2 large eggs

Now for those delicious zucchini fries...

Rinse off the Zucchinis. Trim the ends, then cut each Zucchini into ⅓ inch thick strips.

How to cut like a fancy chef:

  • first cut in half lengthwise
  • lay on flat side for more stability
  • cut in half lengthwise again and then into strips, just like fries

Pour the flour and salt into a large bowl and pop the Zucchini strips in there. Now mix with your hands to coat them thoroughly with flour. Really get in there!

Now pop the bread crumbs, Parmesan and Italian seasoning in a wide bowl. Stir to combine. In a second bowl, quickly whisk the eggs with the water until fairly smooth, like a beautiful pond in the summer. (That happens to look like egg.)

Preheat the oven to 425 degrees. Take the flour coated Zucchini strips and dip them in the egg first, followed by the bread crumb mix, like you’re giving them a very strange bath.

Time to cook your fries. Scatter them on a cooling rack (to prevent soggy fries) and pop them in the oven for 15 minutes.

Now for the hardest bit. You have to wait for them to cool down. Then, arrange the fries in the cone. What would a hedgehog do? (Probably not eat its quills, but you get the idea.)
